Don’t measure! That seems counter-intuitive to being a good cook, but really the most important skill I think you can develop is learning what 2 tablespoons of oil look like, or a teaspoon of salt, etc. It speeds things up so much in the kitchen during preparing food and after with far fewer things to wash. I keep a 1 cup measure in my flour canister and sugar canister and a measuring teaspoon in my baking soda box for quick baking, too. These days I only measure when trying out a new recipe, or baking something complicated. Otherwise, ‘eyeballing’ it works just great

You are braver than I!! I have always wanted to learn how to do that, but I have never dared. Maybe now I will get the courage.
I agree except for baking where the difference between 1 or 2 teaspoons of some ingredients can mess up a recipe.
I completely, totally agree with you! I NEVER measure…I don’t like it! My recipes always turn out great! People might be surprised to hear that about me though…since I post tons of recipes on my site! Every time I post one, I have to actually measure it out and figure out how much of each ingredient I use!
I also have learned to eyeball things. It is as you say so much easier and less cleanup. True, baking, especially breads, does require a bit more control.
